    The amount of info on the web is enormous, as anyone who's ever tried to run a search can attest to.  And, to put it all in context, best estimates say that only a fraction, maybe 20 - 40 % of what's out there is actually making its way to the search engines. 
    Well  ...
    Here at DownStreet, we'd like to try to help.  So each issue, we post a few links in Food & Dining to sites that might interest you.  Sometimes the links will be related to one another  ...  sometimes we'll just offer up a somewhat random sampling.  In either case, we think we might be able to help you find the kind of site you've been looking for.
    Of course, while we can't vouch for the fact that every link we provide will be of interest to everyone, we do our best to filter out the noise and the bustle.  ...

Some Like It Hot!
   Hot Peppers and More on the Web {cont.}

Some years back, one of my cousin's kids was up for a visit and found out I was a spicy hot food fanatic.  So he determined to send me a sampling from a new shop specializing in hot sauces that had recently opened up by him.  Several weeks after he left, a package arrived.  There must've been about a dozen small bottles in it, things with names like Pickapeppa, Habañero Heat, Bite Me ... After Death.  ...

Over the past decade or more, the penchant for fiery foods has spawned an entire industry.  But if you lean that way, you've gotta love it.  Here, then, a few sites to whet your appetite:

  • The Chile Pepper Institute
    In case you think it's just a possibly hip name for yet another Chile site, think again.  ...

    The Chile Pepper Institute exists by the good graces of the College of Agriculture and Home Economics of New Mexico State University and is, in their own words from their mission statement, "devoted to education, research, publication and archiving information related to Capsicums or chile peppers. ... [and] to preserve chile germplasm, of both cultivated and wild species, and to further the studies of Capsicums diseases.  If you don't find any of that sufficiently impressive, then by all means, visit their site.  There, you'll find they live up to their mission, with links to things like Disease/Disorders Diagnosing Pages,  a NEW FAQ, Chile Statistics, Information on Chile Pungency, their CPI "Hall of Flame," a picturesque Chile Garden, The Anatomy of a Chile, and more.

    While associated with the University, the Institute also has a number of items for sale, including Back Issues, including more than two-dozen seed varieties.   ...  If you like it hot, then hop on over to the CPI page.  You can almost taste the heat.

  • Pepper Fool's Chile Pepper Recipes
    Even those of us who like our peppers hot & straight from the garden or jar also like to find new ways of spicing up our lives with a good recipe.  If you're one of us, then the Pepper Fool's site is a must.  ...
    .
    While there are commercial aspects to the site, the meat & potatoes of it are as spicy and delicious as it comes.  The recipes are organized into more than two-dozen major categories, from Appetizers, Barbecue, Beans, and Beef to Tamales, Tortillas, Thai, and Vegetables.  And we're not talking a few recipes each here.  A quick scan of the Appetizers section brought up more than 150 recipes!  Including some out-there exotica -- from dishes like Ajvar (Balkan Vegetable Caviar), Aji Amarillo Dip, Alligator Eggs (Poppers), Andouille Stuffed Jalapenos, and Armadillo Eggs ... and at the other end of the alphabet, West Indian Bean Dip, White Cheddar And Jalapeno Spread, Wrapped Chicken Livers, Yucatan Black Bean Dip, and Zesty Artichoke Dip.  ...

    Whether you love to experiment or are looking for variations on more traditional themes, the Pepper Fool's pages are sure to please.

  • Barbecue'n
    This is obviously a commercial site.  But it's also just as obviously a labor of love.  ...

    It's not just the amount of gear and paraphernalia for sale here that's impressive.  The real treat {and the real aim of our listing it} is the sheer amount of info.  The list of categories is too extensive to even list here, but a sampling includes things like Getting Started, Wood Smokers, Water Smokers, Wood Grills, Kettle Grills, Gas Grills, plus Gas Grill Tips, Must Do's, Weekly Recipes  plus Reader's Recipes, BBQ Tips, The Library, Newsletters, Associations, Temperatures, Specialty Wood, Cuts of Meat, Charcoal & Chips ... separate sections for Wood, Gas, Electric, Water, and Other Grills, an FAQ ... and much more.  ... And for those new to this sport, or those simply curious, there's also a section of Beginner Lessons..
