These days, health-conscious folks tend to steer clear of sugars.  But the fact is, our bodies need sugars as much as other types of caloric intake.  The real question, then, is not whether to indulge in sweet foods, but what kind and what amount.  ...

In that light, we thought we'd devote this month's Vital Signs to some simple facts about maple syrup.  ...

A Few Health Facts About Maple Syrup

Calories per tablespoon40
Pantothenic Acid [B5]:  Percentage DRI of Vitamin B5 per ounce354%
Riboflavin [B2]:  Percentage DRI of Vitamin B2 per ounce150%
Manganese:  Percentage AI* of manganese per ounce160%
Niacin:  Percentage DRI* of Niacin per ounce55%
Calcium:  Percentage DRI of calcium per ounce3.7%
Magnesium:  Percentage DRI of magnesium per ounce1.5%
Phosphorous:  Percentage DRI of phosphorous per ounce0.5%
Maple Syrup also contains trace amounts of Primary Amines, Folic Acid, Pyridoxie (B6), Biotin, and Vitamin A.  It may also contain trace amounts or more of Iron, Zinc, and Copper, as well.

    *NOTES:
    RDA, the "Recommended Dietary Allowance" which appeared on packaging for years, was replaced in 1997 by the DRI, "Dietary Reference Intakes."  The figures used are from "Dietary Reference Intakes: Recommended levels for individual intake," Food and Nutrition Board, Institute of Medicine, National Academy of Sciences. 1998.  Where no specific need for an element has been established, but current thought holds that it ought to be included in a regular diet, an Adequate Intake [AI] figure is used instead.

    DRI's differ according to age, gender, lactation, etc.  The DRI's used were for adult men & women.  Where there were differing RDA's for men vs. women, an average of the two was taken.  Please consult the original document {linked above} for the specifics for age & gender.

    The figures for maple syrup content were taken from "Nutritional Value of Pure Maple Syrup," by M. F. Morselli.  Where variable amounts of ingredients were listed for maple syrup, only those ingredients certain to be present were used, and, here, too, an average was taken between the high and low figures.
